Potassium metabisulfite in wine
Selective inhibitor of undesirable ferments.
Potassium Metabisulfite Vebi performs the following functions:
- coagulant in clarification
- solubilizer of polyphenols
- antiseptic to unwanted microbial flora
- acidifying
- antioxidant
- antioxidase versus oxidase enzymes
Potassium metabisulfite doses:
- 2÷5 g/hl for the treatment of wine diseases before decanting and filtration.
- 10÷20 g/hl for the conversation of filtering sweet wines.
- 10÷40 g/hl for the normal fermentation of white and red grapes;
- The maximum dose is recommended only in case of spoiled or moldy grapes .
- 50÷150 g/hl for the preparation of sweet filtrates.
- 60÷120 g/hl for the preparation of colorful wines.
It should be noted that it is not always appropriate to use the maximum recommended doses of the product, as these are not synonymous with maximum effectiveness. In fact, this depends very much on the moments in which the addition is made and on the technology followed in the production process, of which sulfur dioxide must be an integral part. The maximum stabilizing and preservative effectiveness of this product is therefore a function of the methods of use as well as the doses.
